This Mediterranean nachos recipe is made from pita chips rather than your traditional nachos.
These pita chips are loaded with protein from Greek yogurt and chickpeas, as well as fresh veggies and herbs. Mediterranean nachos can make a great summer appetizer for your whole group.
Mediterranean Nachos – Recipe
Ingredients
- 1 bag whole-wheat pita chips
- 1/3 cup black olives – chopped
- 1/2 cup part-skim shredded mozzarella cheese
- 1/2 cup feta cheese
- 1 tbsp chopped mint
- 1 tbsp chopped parsley
- 1 tbsp chopped dill
- 1/2 cup low-fat Greek yogurt
- 1/4 tsp kosher salt
- 2 cloves garlic
- 2 tbsp lemon juice with additional slices for garnishing
- 3 tbsp tahini
- I can unsalted chickpeas
- 4 tbsp red wine vinegar
- 2 tbsp extra virgin olive oil
- 1/2 medium chopped cucumber
- 1/2 medium chopped onion
- 2 diced plum tomatoes
How to prepare:
- Set the oven to 375°F and place the baking sheet with parchment paper
- Mix chopped onion, cucumber, onion, red wine vinegar, and olive oil. Put the salsa in the fridge for at least 30 minutes
- Prepare hummus.

Mix salt, garlic cloves, lemon juice, tahini, and chickpeas in the food processor.
- Prepare yogurt sauce by combing Greek yogurt, olive oil, red wine vinegar, parsley, dill, and lemon juice
- Arrange the whole-wheat pita chips on the baking sheet
- Sprinkle shredded mozzarella and feta cheese on top of chips.

- Garnish the nachos with hummus, salsa, and yogurt sauce and serve
