Mediterranean Nachos – Recipe

Ingredients

  • 1 bag whole-wheat pita chips
  • 1/3 cup black olives – chopped
  • 1/2 cup part-skim shredded mozzarella cheese
  • 1/2 cup feta cheese
  • 1 tbsp chopped mint
  • 1 tbsp chopped parsley
  • 1 tbsp chopped dill
  • 1/2 cup low-fat Greek yogurt
  • 1/4 tsp kosher salt
  • 2 cloves garlic
  • 2 tbsp lemon juice with additional slices for garnishing
  • 3 tbsp tahini
  • I can unsalted chickpeas
  • 4 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1/2 medium chopped cucumber
  • 1/2 medium chopped onion
  • 2 diced plum tomatoes

  1. Set the oven to 375°F and place the baking sheet with parchment paper
  2. Mix chopped onion, cucumber, onion, red wine vinegar, and olive oil.point 116 | Put the salsa in the fridge for at least 30 minutes
  3. Prepare hummus.point 171 | Mix salt, garlic cloves, lemon juice, tahini, and chickpeas in the food processor.point 241 |

    Ensure the paste formed is thin that can easily drizzle over nachos

  4. Prepare yogurt sauce by combing Greek yogurt, olive oil, red wine vinegar, parsley, dill, and lemon juice
  5. Arrange the whole-wheat pita chips on the baking sheet
  6. Sprinkle shredded mozzarella and feta cheese on top of chips.point 243 |

    Bake until the cheese is slightly melted (5-7 minutes)

  7. Garnish the nachos with hummus, salsa, and yogurt sauce and serve
